Mature cheddar that’s lower in fat…

…several companies including Cathedral City and Sainsbury’s are now doing a lower fat cheese but crucially, for cheese fiends like me, have made really quality tasting mature cheddar style cheeses.  They are approx 25-30% lower in fat but because they don’t skimp on taste you don’t end up using more (or throw them away in disgust).  I have used them to make sauces and they work just fine.  They look a bit strange melted as the lower fat content seems to make them ooze less but taste and feel fine.  Give them a go.  You will be surprised.  A great way to lower the saturated fat in your diet if you are a bit of a cheese addict.
