Bananas in a pan…

1.4 million edible bananas are thrown away every day, according to an article in the Guardian, that is £80 million worth of bananas!!!  As you know I do like to do my bit to reduce food waste, I am far from perfect but I really never throw away a banana as there are too many yummy things to do with a banana that I consider too ripe or bruised to eat.  Here is my latest addition to my list of ripe banana recipes, thanks to Sophie from my Pilates class!

This is an even quicker way to use up overripe bananas than my super quick banana bread and makes a really quick dessert.

  1. Heat a pan and  melt some butter
  2. Throw ripe bananas into pan until hot through and golden – you can chop them or slice them anyway you like.
  3. If you want you can add a sprinkle of sugar (I think brown sugar would taste best here) to caramelize with the butter – you don’t need much as the ripe bananas are pretty sweet on their own.
  4. Serve on their own or with a scoop of ice-cream, frozen yoghurt, a dollop of greek yoghurt or creme fraiche or whatever takes your fancy.  I think in France a blob of warmed Nutella would be a likely addition – Nutella is an institution here in France!!

A quick and easy little indulgence (but it is fruit) whilst saving bananas from the bin!!
